WHere is an easy take on a drink found on our latest menu. This is a batch premix which is packed with tastes of a Christmas time, which makes it perfect for your celebration. Any leftover syrup you can use for morning drinks, sweets, or to mix additional servings of the drink.

Serves 10 people
For the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Cocktail (makes 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch
Method
Making the Cordial: Combine all the components inside a pot, heat until it reaches a light boil, agitating to dissolve. Then, remove from the heat and let it to cool fully. Transfer into a sealable bottle, seal keeping it in the refrigerator, where it will keep for about four weeks.
Preparing the Batch Mix: Mix all the spirits and syrup in a large bottle, allow it to infuse for 60 minutes, then pass it through , ideally through a fine cloth, to ensure it's fully clarified.
To serve: Pour 85ml of the batch mix to a cocktail shaker filled with ice, and agitate gently for about 60 seconds to chill. Pour to a frosted cocktail glass or equivalent, garnish with a few cranberries adding the final touch by giving it a light spray of the essential oil over the top.
